Description

Coq au vin is a French classic in which chicken is braised slowly in a rich red wine sauce.

The chicken pieces are seasoned and browned all over in a hot pan, then removed. Bacon is rendered in the same fat.

The vegetables are added, then the chicken is returned to the pot.

  • Deglazed with red wine
  • Stock is added
  • Braised gently until tender

Cooked until the meat is fall-off-the-bone tender and the sauce has thickened.

  • 800 g chicken thigh
  • 150 g bacon
  • Szószhoz
  • 500 ml red wine
  • 300 ml stock
  • 2 db carrot
  • 1 fej onion
  • 1 csokor thyme
