1. Beat the soft butter with a fork until creamy.
2. Crush the garlic to a paste with a press – grated or chopped it stays in pieces and burns in the oven.
3. Beat it into the butter with the finely chopped parsley, a pinch of salt and the grated parmesan.
4. Cut the loaf on the diagonal but NOT all the way through – leave the base intact.
5. Spread the garlic butter generously into each cut.
6. Wrap in foil and bake at 200°C for 12 minutes, then open the foil for a further 5 minutes to brown the top.
Tip: Those last 5 minutes without foil give the crisp crust – skip them and it just goes soft. Serve with soups, pasta and grilled meats.
