Tonkotsu ramen has a rich, creamy pork bone broth that requires many hours of simmering.
Pork bones are blanched first to remove impurities, then simmered vigorously in fresh water for 6-8 hours. Vigorous boiling is intentional - it emulsifies the fat and collagen to create the cloudy, creamy broth.
The broth is seasoned with a soy-based tare and sesame.
Topped with chashu pork belly, a soft-boiled marinated egg, nori and spring onion.
