Description

Day-old cold cooked rice is essential - freshly cooked rice is too moist and will clump.

A very hot wok is heated with a little oil. The egg is scrambled briefly, then the rice is added and spread out.

  • Tossed constantly over high heat
  • Soy sauce and seasoning are added
  • Spring onion stirred through at the end

Served immediately as a side or light main course.
